Leek Shiitake Miso Soup


One of my favorite soups ever is miso soup, a traditional Japanese soup made with miso paste [fermented soy bean paste]. It is delicious, healthy and very easy and fast to make. Miso soup, in its simplest form, has some silken tofu, wakame seaweed and fresh green onions in it. But you can add whatever you want to make it more hearty and filling. Today I made a miso soup with leek and shiitake mushrooms.
Ingredients
Basic:
-600 ml water
-2tbsp dark miso paste
-1tbsp mellow miso
-1tbsp soy sauce
-6 whole dried shiitake mushrooms or 1/4 cup slice
Add-ins:
-1 small leek or spring onion chopped
-1tbsp dried wakame seaweed
-half package firm silken tofu
In a pot, bring 600 ml of water to boil and add miso paste and stir until it dissolves. Add shiitake mushrooms and let it boil for 5 minutes so that the mushrooms soften. If you wish add one or more of the add-ins.
